Mangrove Jack's Craft Series Mead Yeast M05 is a versatile, high performance dry yeast tailored to modern mead makers and country wine producers. This strain is known for generating fresh, floral esters that complement the natural aromatics of honey and fruit. When fermented on the cooler end of the recommended range, M05 emphasizes bright, clean aromatics and a refined fermentation profile, ideal for show meads, melomels, and other aromatic styles.

With very high attenuation and high flocculation, M05 ferments meads to a dry finish while still maintaining a relatively full body and good complexity. It is capable of reaching alcohol levels up to about 18 percent ABV, making it suitable for standard, strong, and even high gravity meads when managed correctly. For higher alcohol targets, cooler fermentation below 77 degrees F (25 degrees C) is recommended to keep flavors smooth and balanced.

Each 10 g sachet is designed to treat up to 23 liters or 6 US gallons of must. Simply sprinkle the dry yeast directly onto the surface of the must and allow it to hydrate, then stir gently. For best results, ferment between 59 and 86 degrees F (15 to 30 degrees C). This 3 pack provides enough yeast for up to three full 6 gallon batches, or a combination of test batches and full runs.
